Egg Muffin Melts
I am a huge fan of the Pioneer Woman. I stumbled across a book a few years ago that she had written, a fun little auto-biography, Black Heels to Tractor Wheeles, and I loved it. After I read the book I was told she had a cooking show and a few cookbooks, I've never watched her show, but I have since gotten all of her cookbooks. These little treasures were in one of her cookbooks that I got for my birthday. My sister and I have started a tradition, Christmas morning she wakes everyone up at a ridiculously early hour, usually between 4 and 5 in the morning (she's in her 20's) we do gifts, and everyone goes back to bed. Unfortunately once I'm awake, I have a hard time going back to sleep, so Christmas morning we make breakfast while everyone else goes back to bed. These were on the menu one Christmas morning, and they were a hit, my older sister requests them every year. they are great on english muffins, we had some left over egg mix but no more muffins so we put them in tortilla's and they were delicous in them too. I think I actually preferred them in the tortilla's. They last for about a week in the fridge and are nice for on the go breakfasts. Check out the recipe online at ThePioneerWoman.com.
